This Liubao tea is also called Golden Flower Jinhua Liubao due to the presence of varied probiotics such as Eurotium cristatum,  Eurotium amstelodami, Eurotium chevalieri, and Eurotium niveoglaucu,  which resemble the yellow florets. The rich probiotics create a unique Fugus Liubao flavor. 

Q: Will rinsing the tea remove the "golden flower" (a type of beneficial fungus)? Will hot water kill these probiotics?

The "golden flower" is deeply integrated with the tea leaves; a brief rinse with water will not destroy its activity. The superior quality of "golden flower" tea is not only due to its golden-yellow closed-celled shells, but more importantly, during the post-fermentation process, *Eurotium cristatum*, as the dominant fungus, plays a crucial auxiliary and catalytic role. This fungus participates in the oxidation, polymerization, degradation, and transformation of various substances in the tea leaves, such as converting starch into monosaccharides and catalyzing the oxidation of polyphenolic compounds, thus giving the tea a sweet, refreshing, and mellow flavor. It is worth noting that these key substances are not found in the closed-celled shells, but rather in the tea leaves themselves. During its growth, the "golden flower" forms spores, protected by an outer closed-celled shell*. The spores themselves are heat-resistant; short-term contact with boiling water (100°C) will not destroy their activity. Experiments have shown that even when black tea is boiled in boiling water for 20 minutes, the activity of the "golden flower" is still preserved.

The health benefits of golden flower mainly come from its metabolites (such as polysaccharides and enzymes). These substances are stably present in tea leaves, and their effects are not lost even if the microorganisms are inhibited by high temperatures.
